We are SO ready to celebrate all of the amazing couples getting married in 2025! Our culinary, pastry, and beverage teams have been hard at work crafting exciting new F&B creations for this year’s special celebrations.
Here are a few of our top wedding trends for 2025:
1. A Focus on Wellness
We’ve embraced the growing wellness trend and added our own unique twist. Rather than the typical green juice and salads, our team has come up with some delicious (and healthy!) options for your special day. For passed hors d'oeuvres, one of our favorites is the Honeyed Feta Toast with Shaved Shallots and Cucumber Salad. It’s a refreshing bite that brings out the perfect combination of sweet and savory. Another passed app we’re absolutely obsessed with is our Brandywine Tomato Gazpacho with Chervil Crema. It’s not only delicious, but also the cutest little shooter!


Other honorable mentions include our Elote Soup with Tortilla Strips, Cotija, and Cilantro and our Summer Heirloom Tomatoes & Fresh Melon Salad with Tahini Dressing and Garden Basil!

2. Interactive Stations
We love when guests can get involved with a hands-on experience at their welcome party or reception, and our Local Oyster Shucking Station has become a fast favorite! Picture this: Chef Seth Prigg greeting you with a fresh-shucked oyster, a squeeze of lemon, and a flavorful mignonette after your ceremony. Is there anything better? We don’t think so. Pro tip: add caviar bumps for an extra touch of luxury!


3. Bold and Vibrant Cocktails
If there’s one thing our team knows how to do, it’s how to craft a delicious, vibrant cocktail that leaves guests wanting more! One of our favorites for spring weddings is the Basil Gimlet made with Vodka, Basil Syrup, Lime Juice, and garnished with a fresh basil leaf and the perfect dash of flaky sea salt. For something with a little more kick, our Flaming Mai Tai, crafted by our very own Mixologist Kevin, is the perfect choice. Topped with a flammable sugar cube, this drink will WOW your guests and have them talking about it for years to come.


4. Locally Sourced Ingredients
We’re proud of where we live, and even prouder to share the incredible natural ingredients we have right at our fingertips! A PNW wedding wouldn’t be complete without our Seared Wild Sockeye Salmon with Blueberry Green Onion Salsa. Not a fish fan? Our Grilled Coulotte Steak with a Black Garlic Demi-Glace is the perfect dinner buffet option, especially when topped with Mama Lil’s Peppers, grown in Washington’s Yakima Valley!


5. Innovative Creations for Dietary Needs
We’re passionate about accommodating our clients’ dietary needs and making sure that everyone has a seat at the table with a delicious meal and dessert! Speaking of which, our pastry team has created some yummy, dietary-conscious desserts for our wedding couples this year. Two of our favorites include the gluten-free Fromagge Blanc Panna Cotta with Fresh Strawberries and the gluten-free, vegan Sweet Blueberry Polenta Cake, yum!
